To prepare this bread you will need:

  • Wheat flour - 125 grams
  • Rye flour - 75 grams
  • Dry yeast - 5 grams
  • Salt - 5 grams
  • Sugar - 8 grams
  • Mix of seeds - 25 grams
  • Water - 150 grams

To begin, mix both types of flour, salt, sugar, dry yeast and seeds in a bowl. Any seeds can be used. Then gradually add warm water and mix.



No need to knead for a long time. It is enough so that all the ingredients are simply combined. After kneading, the dough should be sticky and sticky. Cover the bowl with cling film and leave for 12-14 hours at room temperature.

After this time, the dough will increase by 2-3 times, the characteristic smell of sourdough and bubbles will appear. Using a silicone spatula, carefully place the dough on a floured surface. Next, turn the dough seam side down and place it on a baking parchment sprinkled with flour. Cover with a clean kitchen towel and leave for 1 hour to stand.
