Vinaigrette is a dish that is a symbol of healthy nutrition and rich flavors. This classic dish usually consists of standard ingredients such as beets, carrots, potatoes, onions and pickles. What if we add another ingredient to this wonderful combination that will make it even more interesting and spicy?
Ingredients:
- 1 large beet
- 2 carrots
- 3-4 potatoes
- 1 onion
- 2-3 pickled cucumbers
- Pickled mushrooms (champignons, porcini mushrooms, mushrooms - according to your taste)
- Olive or sunflower oil
- 1 teaspoon of mustard
- Salt and black pepper - to taste
Preparation:
You should start preparing the vinaigrette by carefully preparing the vegetables, because the taste of the whole dish will depend on their quality. Immerse beets, carrots and potatoes in boiling water and cook until soft. But do not overcook, so that the potatoes do not boil to the state of puree. After that, cool the vegetables and peel them. Cut them into small cubes.
Rinse the pickled mushrooms under running water from the marinade, pay special attention to the mushrooms, if you have chosen them, as sand may remain in them. After washing, cut the mushrooms into the same size as the vegetables. Next, cut the onion and pickled cucumbers.
Mix all the chopped vegetables and mushrooms in a large bowl. Add mustard, oil, salt and pepper to taste. Mix well.
Before serving, chill the vinaigrette in the refrigerator for at least a couple of hours to allow all the ingredients to infuse and the flavors to blend.
