Today I'm sharing a recipe for holiday cheesecake called Isaura. I manage to cook it quickly, I think the process won't take long for you either. It turns out very tasty, the chocolate dough is perfectly combined with the cheese mass, such a delicate and rich taste.
Ingredients:
Chocolate dough:
- 290 gr. flour
- 200 oz. sugar
- 30 gr. cocoa
- 1 tsp. cinnamon or spice for gingerbread
- 200 gr. oils
- 2 tsp. baking powder
- 4 eggs
- 200 ml. water
Curd mass:
- 1 kg. sour milk cheese
- 4 eggs
- 150 gr. oils
- 2 puddings (or the same amount of starch)
- 180 oz. sugar
- lemon zest 1
Preparation:
Chocolate dough:
I add butter, sugar, cocoa and water to the pan. On a small fire, I melt, stirring, the mass until it boils.
Pour into a bowl and cool to room temperature.
I add a pinch of salt to the whites, beat with a mixer to a white lush mass.
I add cinnamon to the melted cocoa, mix with a mixer until smooth, add 4 egg yolks and mix again. Then I pour flour with baking powder and mix with a mixer.
I gradually add the protein mass and mix with a spatula.
Curd mass:
Beat the whites with a pinch of salt with a mixer to a lush white mass.
In a separate bowl, combine egg yolks, butter, sugar and vanilla sugar. Mix with a mixer.
I first grind the cheese with a mixer or rub it through a fine sieve. Gradually add cheese and mix with a mixer. For flavor, I add the zest of one lemon and pudding.
At the end, I add the protein mass and gently mix with a spatula until smooth.
I put parchment on the form and pour half of the chocolate dough.
I spread the curd mass randomly with a spoon on top, without leveling it.
I cover with the second part of the chocolate dough. I put it in an oven heated to 180 degrees for 60 minutes.
I cool the finished cheesecake in the form and put it in the refrigerator for the whole night. I mix powdered sugar with lemon juice to a paste-like state and grease the top of the cheesecake.
