Beer production is a complex and long-term process. At the first stage, malt is prepared from barley of special varieties. Barley grains are germinated, then dried and crushed. Then the grains are poured with water, hops are added and boiled. The resulting mixture is called wort. At the final stage, the wort is filtered and cooled. Brewer's yeast is added to it and left for a short time. About eight days later, the wort is poured into airtight jars, where it ages at a low temperature for at least three weeks. After the end of this process, live beer is obtained. "Live", because it is saturated with microorganisms (brewer's yeast) and trace elements. Such a drink, for example, has a high content of nicotinic acid (vitamin PP), due to the lack of which a person develops insomnia and irritability. Such a drink must be sold within three days, otherwise it will spoil.





If you keep the beer longer than a certain time, it acquires a metallic taste. What is happening at the same time? Fermentation microbes use the valuable substances of beer for their growth, and if they are not removed (if the drink is not filtered), they will begin to release waste products of their activity - ethyl alcohol and carbon dioxide. Beer can become poison.

How to preserve beer and does it remain "alive"? So that beer does not turn into poison, it is filtered at breweries, while biologically active components are killed. This is already "dead" beer, but still without preservatives. Such beer can be stored for a very short time. To increase the shelf life, components are added to the drink that inhibit the growth of yeast. Without these additives, beer quickly loses its taste and becomes cloudy. Previously, the preservative was formalin, which affects the mutation of genes. After discovering such an effect of the substance, its use was refused. Various stabilizers are used to prevent the splitting of beer and preserve the "beer cap" for a long time. Until the sixties of the last century, cobalt chloride was added for this purpose, which caused damage to the heart muscle and became the cause of death of many beer lovers.
