I'm telling you for sure, vodka in the dough works wonders! These vodka pies are like fluff! Bubbly, soft and don't get stale for a long time! The dough is airy, with lots of bubbles, fluffy, and very pleasant to work with.
Ingredients:
Sponge:
- warm water 150 ml
- dry yeast 10 g
- sugar 1 tbsp. l.
- flour 5-6 tbsp. l. from the total amount
Dough:
- 750 g flour
- vodka (moonshine, cognac) 1 tbsp.
- 1 egg pieces.
- salt 1 hours. l.
- sour cream 2 st. l.
- 250 ml of milk
- oil 60 ml
Preparation:
Sponge:
In a bowl, mix warm or room temperature water with yeast, sugar, and flour. Mix until smooth, cover with cling film, and leave in a warm place for 15 minutes.
Dough:
Then I add vodka to the dough and mix. I beat in the egg, add salt and sour cream and mix. I pour in room temperature milk and mix again. I add flour and knead the dough with my hands. At the end, while kneading, I add oil. I grease the plate and dough with oil, cover with cling film and leave for 60 minutes.
You can use anything for the filling, I used mashed potatoes.
I grease a mat or table with oil, divide the dough into 2 parts, shape sausages, divide into pieces and shape into balls. I cover the balls with plastic wrap for 20 minutes. Then I roll out the flatbreads with my hands, spread the filling and shape the pies.
I heat a large amount of oil in a frying pan and fry the patties on all sides until golden brown.
