Beetroot salad with smoked mackerel and homemade mayonnaise is a delicious and hearty dish that will impress your guests. The ease of preparation and availability of ingredients make this salad suitable for any occasion.
Preparing a salad is not difficult, and the result will pleasantly surprise you, your family and guests. The combination of tender beets, smoked fish, potatoes and mild homemade mayonnaise will create a unique taste and texture.
Ingredients (including sauce ingredients):
- 500 g of beets;
- 1 (approximately 200 g) smoked mackerel (or herring);
- 300 g of potatoes;
- 1 onion;
- 1 tsp. sugar;
- 1 Art. l. 9% vinegar;
- 50 g of hard cheese;
- 1/3 tsp. salt;
- 50 ml of milk (room temperature);
- 100 ml of vegetable oil;
- 1/2 tsp grainy or Dijon mustard;
- 1 Art. l. lemon juice
Step-by-step recipe:
First, boil the beets and potatoes until fully cooked. While the vegetables are cooking, prepare the fish. Disassemble the fish into fillets, remove the bones and skin, and then cut it into small cubes. Grate the cheese on a fine grater. Cut the onion into half rings, add sugar and vinegar, then leave it for 15 minutes to make it softer and less spicy.

Making homemade mayonnaise:
You can use regular mayonnaise or make a homemade sauce. To do this, beat the milk and vegetable oil in a blender until thick (the process is not fast - it will take about 30 minutes). Then add salt, mustard and lemon juice, mix well. Such homemade mayonnaise will be lighter and more delicate than the store-bought one, and the salad will become more refined.
Laying out layers:
For convenience, use a cooking ring. Lay out the layers in this order: half of the grated beets, spread with mayonnaise; grated potatoes, again with mayonnaise; pickled onions, a layer of mayonnaise; fish cubes, mayonnaise; grated cheese, mayonnaise; the rest of the beets, a decorative mesh of mayonnaise on top.
Once all the layers are laid out, carefully remove the ring and leave the salad to infuse in the refrigerator for about 30 minutes. Garnish the salad with fresh herbs before serving.
