Delicious pancakes with kefir and boiled water

Pancakes on kefir and boiling water are a tender, aromatic and extremely tasty dish that will be a great addition to any table. They can be served with both sweet and savory fillings, making every meal special. Thanks to the combination of kefir and boiling water, the pancakes are thin, elastic and have a beautiful lacy texture.

Ingredients:

  • 500 ml yogurt
  • 250 ml of boiling water
  • 3 chicken eggs
  • 300 g of high-grade wheat flour
  • 2 tablespoons sugar
  • 0,5 teaspoon of soda
  • 3 tablespoons of sunflower oil
  • A large pinch of salt

Step-by-step instructions:

  1. Preparation of products. All ingredients should be at hand. It is advisable to slightly warm the kefir to a warm state, but do not overheat it so that it does not curdle.
  2. Preparing flour. Sift the flour through a sieve to oxygenate it. This will help make the dough light and fluffy.
  3. Beating eggs. In a separate large bowl, beat the eggs, add salt and sugar. Beat with a whisk or mixer until smooth, slightly foamy.
  4. Adding kefir. Pour the warm kefir into the egg mixture, continuing to mix. The mixture should become uniform and smooth.
  5. Adding flour. Gradually add the sifted flour, stirring constantly with a whisk to avoid lumps.
  6. Soda. Add baking soda to the dough and mix well so that it is evenly distributed throughout the mass.
  7. Boiling water. Pour the boiling water in a thin stream, quickly mixing the dough. The boiling water will give the pancakes the desired elasticity and fine texture.
  8. Oil. Add sunflower oil to the finished dough and mix thoroughly again. If the dough seems too thick, you can add a little more boiling water (10-20 ml), reaching the desired consistency.
  9. Baking pancakes. Heat a non-stick frying pan well and grease it with a thin layer of oil. Pour the batter into the pan with a ladle and spread it evenly, tilting the pan in different directions.
  10. Roasting. Cook the pancakes over medium heat, frying each side until golden brown. This will take about 1-2 minutes per side.
  11. Innings. Stack the finished pancakes on a plate, brushing lightly with butter if desired. Serve with sour cream, honey, jam, or fill with savory products - ham, red fish, caviar, or cheese.
