To make delicious pies, it is important that both the dough and the fillings are delicious. We offer you a wonderful recipe for pies with cherries, where the highlight of the dish is the dough. Try adding one secret ingredient to the dough, namely vinegar, and you will be amazed by its fluffiness and tenderness. In addition, such a dough stays fresh longer.
Necessary ingredients:
for the tist:
- milk - 120 ml;
- sugar - 80 g;
- dry yeast - 6 g;
- eggs - 2 pcs.;
- butter - 60 g;
- pinch of salt
- vanilla;
- vinegar - 1 tsp;
- flour +- 450 g.
For the filling:
- pitted cherries - 600 g;
- sugar - 100 g;
- starch - 25 g.
For posipka:
- sugar - 20 g;
- flour - 30 g;
- butter - 15 g.
Method of cooking:
To prepare the dough, add dry yeast to warm milk and mix thoroughly. Next, add sugar, salt, vanilla and eggs to the milk and beat with a whisk. The next step is to add melted butter and after mixing, gradually add flour.
Mix the dough first with a spatula, then with your hands. As soon as the dough comes together in one lump, add a teaspoon of vinegar and begin to knead the dough thoroughly on the work surface. The finished dough will be soft, elastic and not sticky to your hands at all.

Transfer the dough to an oiled bowl, cover with a towel and leave in a warm place to rise for 40-60 minutes.
To prepare the filling, transfer the pitted cherries to a saucepan, add sugar, starch and mix well. Put on the fire and heat for a few minutes after boiling, stirring constantly. When the starch has brewed and the mass becomes thick, the filling is ready. Remove from the fire and cool.

When the dough has risen, form small balls from it, cover with a towel and let them rise for another 20 minutes. Then, form each ball into a pie with cherry filling inside. Place the pies on a baking sheet lined with parchment paper. Let the pies rise a little before baking.
If desired, make a topping: rub the soft butter with sugar and flour and sprinkle the pies with this crumb. Grease the pies with an egg.

Bake the pies in a preheated oven at 180 degrees for 30 minutes.
