Ingredients:
- 1 kg of potatoes;
- 300 g of mushrooms (champignons or porcini mushrooms);
- 1 pcs. onion;
- 2 cloves of garlic;
- 2 tablespoons mustard (Dijon);
- 100 ml of sour cream;
- 2 Art. spoons of olive oil;
- salt, black pepper - to taste;
- greens (parsley, dill) - for decoration;
- 50 g of hard cheese (optional).
Method of cooking:
To prepare delicious and appetizing baked potatoes with mushrooms in mustard sauce, you should follow these steps:
Step 1. Preparing the potatoes
Peel, wash and cut the potatoes into cubes or slices, as you prefer. Then boil the potatoes in salted water until half cooked (about 7-10 minutes after boiling). They should soften a little, but remain whole. After cooking, drain the water and let the potatoes cool slightly.
Step 2. Preparing the mushrooms and sauce
Peel the onion and cut into small cubes. Wash the mushrooms, if necessary, and cut into slices or cubes. Heat the olive oil in a frying pan, add the onion and fry until golden brown (4-5 minutes). Add the mushrooms to the frying pan with the onion and fry them over medium heat until they release all their moisture and turn brown (7-10 minutes).

In a small bowl, combine the mustard, sour cream, minced garlic, salt, and black pepper. Stir the sauce until smooth.
Step 3. Assembly and baking
Preheat the oven to 180°C. Place the boiled potatoes, mushrooms and onions in a deep baking dish, mix all the ingredients thoroughly. Pour over the mustard sauce and mix well so that each piece is covered with the sauce. If desired, sprinkle with grated cheese to create a crispy crust. Place the dish in the oven and bake for 30-35 minutes, until the potatoes are soft and a golden crust appears on top.
Step 4. Submission
Remove the finished dish from the oven and let it cool slightly. Before serving, garnish with fresh herbs (dill, parsley) for additional freshness and brightness. Serve the baked potato as a main dish or a side dish for meat - it goes well with chicken, beef or fish. Enjoy!
