In order for the broth to have a rich taste, but a transparent color, it is worth draining the water after the first boil. That is, we drain the first broth, do not be afraid that everything in it is most useful and tasty.
After the broth boils a second time, immediately remove the foam that forms.
It is advisable to add onions and carrots for taste and aroma. However, do not cut the onion, and even more so do not fry it. Just add whole, it will give flavor and will not muddy the broth.
Cook the broth over low heat, adding salt, spices and a bay leaf (to taste).
When the meat is ready, it is easy to check near the bone. It should just come off. remove it and the vegetables. Strain the broth through cheesecloth or a bandage folded in several layers.
