Now all my friends and family love this salad! It's so delicious and quick to make that I make it myself almost every other day!
Ingredients:
- eggplant – 400 g
- cherry tomatoes – 8-10 pcs.
- boiled eggs - 3 pcs.
- hard cheese - 80 g
- dill and onion greens to taste
- 2-3 tooth. garlic
- sour cream - 3 tbsp. l
- 1-2 st. l. oil for frying
- salt to taste
Preparation:
I wash the eggplant, wipe it dry and cut it into cubes, I don't peel it, but it's all up to the amateur. Then I pour water and salt to taste, all this to remove the bitterness, leave it for 5-7 minutes. Then I transfer it to a colander and leave it to drain the juice.
I fry the eggplants in oil for about 7 minutes until cooked and golden brown. And then I let the excess oil drain again.
Meanwhile, I roughly chop the cherry tomatoes.
I dice the boiled eggs and grate the cheese on a large grater.
I chop the green onions, dill, and grate the garlic on a fine grater.
I put everything in a convenient deep bowl and add sour cream.
I stir and taste. Delicious!
