I take simple ingredients and bake a very interesting and delicious dessert! They go down a treat with tea or coffee!
Ingredients:
- Puff pastry 370 g
- Powdered sugar for sprinkling
Cream:
- Flour 35 g
- Cold milk 220 ml
- Lemon zest 1 pc.
- Cinnamon as desired
- Water 100 ml
- Sugar 180 g
- Yolks 4 pcs.
Preparation:
I roll out the puff pastry, sprinkle it with flour, roll it up, cut it into 12 pieces. I put it in the freezer for 10 minutes.
Cream:
I put the flour in a bowl and pour in a little cold milk from the total amount, mix so that there are no lumps. I pour the rest of the milk into the saucepan, add the lemon zest, cinnamon, mix. I put it on medium heat, stirring constantly, bring to a boil, but do not boil. I turn off the heat and add the flour and milk mixture, mix. I put it on medium heat again, stirring constantly, bring the custard mass to a boil.
I pour water into another saucepan, add sugar, stir and bring to a boil. After boiling, I cook the syrup for another 4-5 minutes.
I pour the hot syrup into the custard mixture, stir it in. Then I strain the cream through a sieve to get rid of the lemon zest. I leave the mixture to cool completely.
Add the yolks to the cooled cream and beat with a blender until smooth.
I spread the dough into a muffin tin, flatten it with my fingers, and put it in the freezer for another 10 minutes.
I pour the cream into molds. I bake in a preheated oven to 240 degrees for about 10-12 minutes.
I decorate with powdered sugar, delicious!
