Method of cooking:
To prepare openwork pancakes with carbonated water, you should follow the following steps:
Step 1. Preparation of the dough
In a deep bowl, mix the eggs with sugar and salt. Beat them with a whisk until smooth. Add the milk and continue beating until the ingredients are well combined.
Step 2. Adding flour
Sift the flour to oxygenate it. This will make the pancakes even more tender. Gradually add the flour to the egg-milk mixture, stirring with a whisk to avoid lumps.
Step 3. Carbonated water
Pour the carbonated water into the dough in small portions, mixing gently. The dough should be liquid, resembling drinking yogurt in consistency. Add the vegetable oil and mix again.
Step 4. Preparing the pan
Heat a frying pan over medium heat. Before the first pancake, lightly grease it with vegetable oil or butter.

If you have a special pancake pan, use it - it will help you get perfectly flat pancakes.
Step 5. Frying pancakes
Scoop the batter with a ladle and pour it into the pan, rotating it to distribute the batter in a thin layer. Fry the pancake on one side until golden edges appear, then flip and cook for another 20-30 seconds. Stack the finished pancakes, greasing each with butter.

Temperature of ingredients: All ingredients, including sparkling water, should be at room temperature. This will ensure better mixing.
Dough consistency: if the dough is too thick, add a little more soda water.
Oil in the batter: thanks to vegetable oil, the pancakes will not stick to the pan.
Carbonated water: It is recommended to use highly carbonated water, as it is what creates the airy texture.
Quick mixing: After adding carbonated water, the dough should be used immediately to avoid losing the bubbles.
