
I cook very lush fritters, they never fall! Inside, they are not greasy at all! My favorite and very simple recipe!
Ingredients:
- 500 ml of fermented milk products (kefir, matzoon, yogurt, milk or sour cream)
- 1 egg
- 2-3 century l. sugar
- 400 g flour
- 1 hour l. soda without bitters
- 1 tsp. salt (4 g)
- vanilla as desired
- oil for frying
Preparation:
In a saucepan on the fire, I bring the fermented milk product to a warm state, to slightly above body temperature.
Preferably kefir, matzoon or yogurt, you can mix all of these products together, which is at hand, part of it can also be replaced with sour cream. You can also replace part of it with milk, but then part of the soda needs to be replaced with baking powder.
In a bowl, beat an egg with a fork and pour in the warm fermented milk product, mix. It is possible without an egg, but then the dough becomes stale earlier. I add sugar, mix. I pour flour, soda and salt, mix until smooth. Also, if desired, you can add vanillin (I do not recommend overdoing it with synthetic vanillin, it can make the dough rubbery). I cover the dough and leave it to rest for 20 minutes, no longer.
I heat the oil in a pan, transfer the dough to a pastry bag, put it on a hot pan, fry the fritters over medium heat, closer to minimum. I fry each side of the fritters under the lid.
If you bake pancakes without oil, try to be more careful about the amount of added flour. I even more often recommend adding less than the specified amount, so they will be more tender, lush.
I put the fritters on paper towels to get rid of excess oil. Bon appetit!
