Ingredients:
- Sour-milk cheese (you can take any fat content) – 600 g;
- Eggs - 2 pcs.;
- Honey (the dessert turns out unsweetened, you can increase it to 150-200 g) - 100 g;
- Vanillin - on the tip of a knife;
- Starch - 40 g;
- Gelatin - 20 g;
- Milk – 500 g (for cream) + 100 g (for gelatin);
- The diameter of the form is 18-19 cm.
Method of cooking:
Dissolve the gelatin in 100g of cold milk and leave for 10 minutes to swell. Beat the eggs together with the cornstarch and a little milk until smooth.
Place the remaining 450ml of milk over a medium heat and bring to the boil, stirring constantly. When the milk is boiling, gradually add the prepared egg and starch mixture, stirring constantly. Cook the cream over a medium heat until it begins to thicken. As soon as the first bubbles of boiling appear, cook for another 30-60 seconds to allow the starch to brew.
When the custard has cooled slightly, add 100 g of honey and, if desired, vanilla flavoring. You can use vanilla extract or a pinch of vanillin (it should be added in small quantities, as it has a bitter taste). If desired, you can use 20 g of vanilla sugar instead of vanillin. Mix all ingredients until smooth.

Add 600 g of cottage cheese to the custard and mix thoroughly. Taste the mixture and, if necessary, add more honey to taste. It is important to remember that the dessert will be unsweetened, but very delicate and light. Melt the gelatin and add it to the mixture. Beat everything thoroughly with a blender.
Prepare a baking pan with a diameter of 18 cm, or you can use a 20 cm one if you don't have one. Pour the mixture into the pan, cover with cling film and refrigerate for 6-8 hours to allow the dessert to set completely.
When the cake is completely frozen, you can decorate it with melted chocolate or other decorations to your taste. An extremely tasty and healthy diet cake is ready! Cut the cake into portions and enjoy its delicate taste. Enjoy!
