Sometimes you want something sweet, but you just don't have time for complicated desserts. This roll is perfect for those moments - no baking, no complicated technology, and no long hours of waiting. All you need is a few simple ingredients, 20 minutes of your time, and a little inspiration.
- 300 g of cookies (preferably shortbread or chocolate);
- 100 ml of milk or cream;
- 2 Art. l. cocoa;
- 50 g of butter;
- 3 tbsp. l. sugar or condensed milk;
- 200 g of soft cheese (or mascarpone);
- 1 tsp. vanilla sugar;
- 50 g of coconut flakes or nuts (optional).

Prepare the roll base. Crush the cookies into fine crumbs – you can use a food processor, blender, or simply put the cookies in a bag and roll them out with a rolling pin. Add the cocoa and mix.
Form the “dough”. Melt the butter in the milk (or cream), add the sugar (or condensed milk) and mix until smooth. Then pour this mixture into the cookies and knead well. You should get a soft, plastic dough that is easy to roll out.
Prepare the filling. Beat the cheese or mascarpone with vanilla sugar until smooth. If you want more sweetness, add a spoonful of honey or powdered sugar. You can also add coconut flakes or chopped nuts for extra flavor.

Assemble the roll. Roll out the chocolate base on parchment paper into a rectangle (about 5 mm thick). Place the cheese filling on top and spread evenly. Using the parchment paper, carefully wrap the roll, pressing the edges well.
Wrap the roll in cling film and refrigerate for 15 minutes – this will help it firm up and cut better. Cut the roll into slices, sprinkle with cocoa or grated chocolate, garnish with mint – and serve.
