Is it possible to have barbecue without ketchup? Ofcourse not. We refuse store-bought products with various additives and prepare homemade sauce with hot pepper. This ketchup is very tasty. So, let's talk about the cooking process.
Ingredients
For cooking, you need the following products:
- tomatoes - 6 kg;
- onion - 2 kg;
- carrots - 1 kg;
- hot red pepper - 8 pcs.;
- garlic - 300 g;
- sugar - 2 cups;
- salt - 6 tablespoons;
- vinegar 9% — 200 ml;
- ground red pepper - 2 tablespoons;
- a mixture of spices for barbecue - 2 tablespoons;
- bay leaves - 6 pcs.;
- allspice - 8 pcs.;
- cloves - 8 pcs.;
- parsley - a bunch.
How to cook
All vegetables are thoroughly washed and chopped through a meat grinder. Along with them, you also need to skip garlic and parsley. Put on fire, bring to a boil and cook for 2 hours. After cooking, you need to beat the entire mass with a blender. Now the vegetable mass should be seasoned with salt and sugar and put back on the fire.
We make a gauze bag with spices. We put bay leaves, allspice, cloves there and send it to the pan. The mixture should be boiled for 1,5 hours, it should thicken. If you need more thickness, then cook longer. After that, take out the gauze bag. Taste for salt. If necessary, add salt. Next, a series of barbecue spices, ground red pepper and vinegar. Let the mixture boil a little.
Ketchup is poured into sterilized jars and screwed with lids. They should be covered with a warm blanket and left to cool. The ketchup is ready, now you have an excellent homemade sauce for barbecue. Bon appetit!
