You will need the following products:
- one kilogram of potatoes;
- one bulb;
- one egg;
- two to three tablespoons of flour;
- two hundred grams of hard cheese (mozzarella, cheddar or suluguni);
- salt and pepper - to taste;
- vegetable oil – for frying;
- sour cream or other sauce – for serving.
Method of cooking:
Peel the potatoes and grate them on a fine grater. Grate or finely chop the onion as well. Squeeze the potato mixture slightly to remove excess liquid. Add the egg and flour to the potatoes, as well as salt and pepper. Mix very thoroughly until you get a uniform consistency. The dough should be thick enough so that the dumplings do not fall apart when frying.
Grate the cheese on a large grater. It is best to use hard cheeses that melt well, such as mozzarella or cheddar. Set the prepared cheese aside - it will be the filling for the dumplings.
On a heated frying pan with vegetable oil, spoon a small portion of the potato mixture, flatten it to make a thin pancake (flatbread). Put a little grated cheese in the center of each pancake, cover with another portion of the potato mixture. Gently press the edges so that the cheese remains inside.

Fry the pancakes over medium heat on both sides until they have a delicious golden crust – about three to four minutes on each side. It is important to make sure that they do not burn, but at the same time they have time to fry well inside and the cheese has melted. You can cover the pan with a lid for this.
Place the finished dumplings on paper towels or kitchen towels to remove excess fat. Serve hot with sour cream or any other sauce.
Tips:
Potatoes with a high starch content are best for the doughnuts – they give a crispier crust. If the dough seems too runny, you can add a little more flour or starch.
In addition to cheese, you can add finely chopped herbs, ham, or mushrooms to the filling. This will diversify the taste and make the dish even more interesting.
To prevent the breadcrumbs from absorbing too much oil, they should be fried over medium heat and placed only on a well-heated frying pan.
If you want to make the dish less caloric, you can bake the dumplings in the oven. To do this, place them on a baking sheet lined with parchment paper and bake at 200°C for about 20 minutes.
