We share a recipe for a delicious and bright beetroot roll, which will decorate your holiday table. Read the details, cook and enjoy.

Ingredients for the cake:
250 g boiled beets
3 eggs
80 g flour
1/2 tsp. salt
ground black pepper
oil - 1 tbsp.
For the filling:
250 g of herring fillet
300 g cream cheese
4 tsp. mustard seeds
a bunch of green onions
Preparation:
Grate the boiled beets on a fine grater, place in a bowl. Separate the egg yolks from the whites and beat the whites until stiff peaks form. Add the yolks, flour and oil to the grated beets and mix thoroughly.
Add the beetroot dough to the egg whites and mix until smooth with a spatula. Place the beetroot dough on a baking sheet lined with parchment, smooth it out and place in the oven, preheated to 180 degrees, bake for 15 minutes.
Let cool for 10 minutes, place on cling film, remove the parchment, spread with cream cheese, and place a herring fillet and mustard seeds on one edge. Finely chop the green onions and sprinkle on top.
Wrap the roll tightly, wrap in cling film and refrigerate for 1 hour. After that, you can slice and enjoy. Enjoy!
