Eating vegetables that are useful in many ways, rich in fiber and vitamins, can be harmful because of their ability to cause a sharp spike in sugar. Doctors have told which products should be avoided by those whose blood sugar is already quite high.
Nature's gifts, vegetables and fruits, are revered for their rich fiber and vitamin content. But there is another important criterion for the health benefits of plant-based foods – the GI, or glycemic index, which reflects their ability to raise blood sugar.
Products with a high glycemic index include those with a GI of 70 and above, experts said. These products are not recommended for use by diabetics, and their amount in the diet of healthy people must be strictly controlled.
As an example, experts cited zucchini, a vegetable with a number of health-benefiting qualities. But the GI of zucchini is almost 75 units, and therefore, a rapid increase in blood sugar levels will be ensured after them.
Another useful product is carrots. In its raw form, the glycemic index of carrots does not exceed 40 units. But after heat treatment, it increases sharply: baked or boiled carrots contain a GI of 85 units (and therefore it is not recommended for people with high blood sugar due to diseases).
Speaking of rice, experts recommended eating brown unpolished rice, whose GI is only 50. White polished rice has an index of 89-90 units.
