
Today we want to tell you how to make a delicate homemade cheesecake with cheese and sour cream filling. The pie is prepared very simply, because for its basis we will not use dough, but ready-made cookies.
Ingredients:
For the base:
Cookies ("To coffee", etc.) - 300 grams
Butter - 100 grams
Toppings:
- Sour cheese 5-9% fat - 500 grams
- Thick sour cream - 200 grams
- Eggs - 3 pcs.
- Sugar - 150 grams
- Lemon peel - 1 tbsp.
Preparation:
Let's start preparing the base. To do this, you need to grind the cookies in a blender to the state of crumbs. Melt the butter and mix it with the cookies. Line a baking dish with a diameter of 22-24 cm with oiled parchment. Spread the shortcrust pastry and distribute it on the form, forming the sides for the pie. Take the form with the base to the refrigerator. While it hardens, prepare the filling.
Put soft cheese and sugar in a deep bowl. Beat the mass with an immersion blender until fluffy. Add thick sour cream and beat the mass a little more. Without stopping to beat, add eggs 1 piece at a time. At the end, add the zest of one lemon. Mix the mass with a spatula or spoon.
Pour all the filling onto the cooled base and place the mold in the oven, preheated to 170°C. Bake for 35-40 minutes. Then turn off the heat and let the cheesecake stand in the oven for another 15 minutes. Then cool it completely on the table and put it in the refrigerator for 6 hours. Only after that, it will acquire a dense consistency and it can be cut into pieces.
