Unlike other cereals, millet has a short shelf life.
Only those cereals whose expiration date has been slightly exceeded are bitter. This happens because vegetable fats are oxidized.
Details
It is quite possible to "wash off" the oxidized fat from millet, and then there will be no bitterness in the finished dish.
How to wash millet to remove bitterness
Take a deep bowl and fill it with hot water. Pour millet there and leave for 15 minutes. Then drain the water and wash the millet under hot water. We repeat this procedure 3-4 times.
There is another way. As the millet boils on the stove, you can remove the pan, drain the water and pour clean water. If you repeat this trick several times, the cereal will be cleaned and the bitterness will go away. However, the first method is faster and somewhat more familiar.
You can simply pour hot water over the millet before the cooking process.
As a rule, this is enough so that the porridge does not become bitter.
If the hot water did not cope with the bitterness, then you should not eat such porridge.
Millet groats that have been stored for a long time can disappear. Eating bitter groats is harmful to health. This can lead to poisoning.
How to make millet crumbly?
The secret of crumbly millet porridge is in the right proportions of groats and water or milk.
To prepare crumbly millet groats, pour 1 cup of groats with 1-1,5 cups of water or milk. Add salt, sugar and oil.
Cook it over low heat, stirring. The water should evaporate completely, the porridge will be crumbly and dry.
