Ingredients for the dough:
4 egg yolks
200 g butter
150 g flour
1 tsp. baking powder
For the filling:
2 kg of apples
150 g of sugar
juice and zest of 1 lemon
4 proteins
180 g of sugar
Beat the yolks with butter, add flour and baking powder, knead the dough. Divide the dough into two unequal parts and wrap in cling film. Put 1/3 in the freezer, and 2/3 in the refrigerator.
Peel and grate the apples and stew in a pan with sugar,
with zest and lemon juice until the moisture completely evaporates, then cool. Beat 4 egg whites with sugar until thick, stable foam.
After that, roll out most of the dough and line it in a mold. Place the apples on top, and half of the smaller portion of the dough on top of the apples. Put the beaten egg white on top of the dough, and the remaining dough on top of the egg white. Put in the oven, heated to 180 degrees, bake for 40-50 minutes. Bon appetit!
