In this article from the editors of the Dobri Novy website, you will learn how to create a dish from simple pearl barley that will appeal to even the pickiest little gourmets.
In order for pearl barley to turn into a silky, fragrant and tasty dish, it is important to prepare it correctly and add interesting ingredients. We offer a new approach: creamy porridge with a delicate creamy taste, juicy vegetables and a light aroma of spices.
Recipe "Pearl porridge in a new way"
- Pearl groats - 1 cup;
- Water - 3 cups;
- Milk - 1 glass;
- Butter - 50 g;
- Hard cheese (optional) - 50 g;
- Carrot - 1 pc.;
- Onion - 1 pc.;
- Sweet pepper - 1 pc.;
- Salt and spices to taste (turmeric for color, a pinch of nutmeg);
- Greens for serving (parsley or dill).
So that the groats become soft and cook faster, soak them in cold water overnight or at least for 4-5 hours. Then rinse well. Pour pearl barley with 3 cups of water, bring to a boil and cook over low heat until the groats are soft, but not boiled (it will take about 30-40 minutes).
Melt the butter in a pan, fry the finely chopped onion until transparent. Add grated carrots and finely chopped sweet pepper. Simmer for a few minutes until soft. Add milk, butter, stewed vegetables and spices to the finished porridge. Mix well and keep on low heat for another 5 minutes so that all the flavors are mixed.
Before serving, you can sprinkle the porridge with grated cheese and finely chopped greens. Cheese will give the dish a creamy shade, and greens will make it bright.
