Ingredients:
- Boiled potatoes - 2-3 medium tubers.
- Boiled meat (pork, beef or chicken) - 350 g.
- Onion - 2 medium pieces.
- Pickled cucumbers - 250 g (about 7 small ones).
- Semi-hard cheese - 150 g.
- Mayonnaise - to taste.
- Crackers from rye bread - for decoration.
- Salt and ground black pepper - to taste.
- Greens (parsley or dill) - for decoration.
Method of cooking:
This salad is suitable both for a festive table and for everyday meals. Let's start with cooking potatoes. Grate boiled potatoes, add salt, ground black pepper and a little mayonnaise. Mix thoroughly and spread the first layer on a dish or in a salad form.
The next layer is meat. We boil pork (or other selected type of meat) in salted water with spices, after which we leave it to cool in the broth to preserve juiciness. Cut into cubes and put on top of the potatoes. Add a little mayonnaise and spread.
The third layer will be fried onions. Cut two medium onions, fry them until golden and put them on top of the meat. Mayonnaise is not used here, as the onion itself adds juiciness.
Add pickled cucumbers as the fourth layer. Cut them into cubes and distribute them evenly on top of the onion. If the cucumbers are very juicy, it is better to wet them first with a napkin to avoid excess liquid. We also apply a mesh of mayonnaise on this layer.
Next, grate semi-hard cheese on a large grater, preferably with a slight sourness. Spread the cheese on top of the cucumbers, make a mesh of mayonnaise and, if the salad is prepared in advance, cover it with cling film and put it in the refrigerator for soaking.
Before serving, decorate the salad with breadcrumbs. Homemade croutons from rye bread are prepared very simply: cut the bread into cubes, dry it in the oven until it becomes crispy. They can be replaced with store ones, but homemade ones add a special aroma and taste. If desired, we add fresh herbs for decoration.
The salad can be served immediately after cooking - it is already delicious. If you leave it overnight in the refrigerator, the flavors will combine better, and the shape will remain perfect. We add the crackers just before serving so that they remain crunchy.
