Dried apples
Drying is the best way to preserve useful substances. To do this, apples must be cut into rings or pieces, dipped in acidified water so that the slices do not turn black.
Then dry on a towel and dry. Even 50 years ago, fruits and berries were dried on the stove, then they started using the oven.
Apples must be laid out on a baking sheet, turn on the oven at 40-50° and leave for 5-8 hours with the door open.
For those who have a dehydrator, everything is easier. You just need to load the cut pieces into the drying chamber and set the appropriate mode.
Urination
Soaked apples are a classic of ancient cuisine. Apples were soaked in oak barrels, spices, honey, salt, currant and oak leaves were added.
Simple urination
Apples were placed in a barrel in rows, each row was sprinkled with leaves of black currant, cherry, and tarragon. 100 g of salt was taken for two buckets of apples, diluted in 10 liters of water and poured over the apples. A wick was placed on top. They took it to a cold place.
With rye flour
2 g of rye flour was taken for 410 buckets of apples, brewed with 1 bucket of boiling water, mixed. They waited when the sediment was at the bottom, drained the clear water and poured it over the apples. With this method, tarragon was often added to the apples. Stored under pressure in a cold place.
Modern adaptation
Unfortunately, in modern realities, not everyone can keep barrels of soaked apples at home. But modern housewives found a way out.
In a three-liter jar, you need to put apples, throwing a couple of cloves and peas, allspice at the bottom. You can add currant and cherry leaves or do without them.
Pour cold water with the addition of 0,5 tsp. salt Close with a tight lid and put in the refrigerator. Apples will first absorb water. It is necessary to check and top up so that the fruits are always covered with water.
Pickled with cabbage
Apples fermented together with cabbage are extremely tasty. To do this, you need to ferment the cabbage in any way that you like best.
Only in the middle of the container, between the lower and upper layers of cabbage, put a row of peeled and cut apples in halves or quarters. If the cabbage ferments a lot, you can alternate several rows.
These methods of harvesting apples are in no way inferior to canning, but are much more useful.
