Today I am cooking delicious zucchini caviar. The whole family always asks for extras and is eaten in minutes! Very tasty to eat as a spread with bread!
Ingredients:
- zucchini 3 kg.
- carrot 1 kg.
- onion 1 kg.
- olіya
- 3-4 tsp. salt
- 1/3 tsp. ground black pepper
- 4 Art. l. tomato paste
- 3 Art. l. vinegar
Preparation:
Peel the zucchini and cut into small cubes.
I grate the carrot, cut the onion into small squares. Fry together in oil.
Now I put carrots, onions and zucchini in a saucepan. I put it on the fire and stew for 20 minutes from the moment of boiling.
I take it off the heat and beat the whole mass with a blender.
I add salt, ground black pepper, vinegar and tomato paste, mix.
I put it on the fire again for 20 minutes.
Now I spread the caviar in sterilized jars, close tightly with lids.
But I enjoy the deliciousness!
