Today I'm sharing with you a recipe for incredibly tasty and delicate puff pastry tubes with vanilla custard on yolks. Everyone likes this combination!
Ingredients:
Dough:
- Flour 500 g
- Butter 250 g
- Yolks 4 pcs.
- Vinegar 1 tbsp. l.
- Sour cream 100 ml
- Lard 100 g
- Flour 2-3 tbsp. l.
Cream:
- Starch 3 tbsp. l.
- Sugar 200 g
- Vanilla sugar 2 pcs.
- Egg yolks 4 pc.
- Milk 500 ml
- Butter 275 g
Preparation:
Dough:
I add melted butter, egg yolks, vinegar and sour cream to the flour.
I knead the dough. Divide into 4 parts.
Roll out one part at a time, grease with melted lard.
I sprinkle flour on top and make a roll.
I fold the roll into a pile and put it in the refrigerator for 1-1,5 hours.
Roll out again, cut into strips.
I wind these strips on the form. Instead of these metal forms, you can use foil, as an option, just give it the appropriate tube shape.
I put it on a baking sheet and bake it in an oven heated to 180 degrees for about 15 minutes.
Cream:
I pour sugar, starch, vanilla sugar into a bowl, mix. I pour the yolks into the milk and mix. I combine dry and liquid mixtures.
I put it to cook in a water bath, stirring constantly, until it thickens. Cover with cling film and leave to cool.
When the cream has hardened, I add soft butter and beat with a mixer until fluffy.
I transfer the cream into a pastry bag and fill the tubes with it.
