This is a very good way to cover cucumbers without vinegar using cold water. It has been accepted in our family for a long time. Great-grandfather invented this method.
Ingredients:
- cucumbers;
- salt, 1 kg;
- hot pepper, garlic, to taste;
- clean water, 10 l.
- greens (the ones you put in canning)
Preparation:
Dissolve salt in clean and cold water.
Place greens, garlic and cucumbers in jars. We took such greens as in the photo.
Arrange cucumbers in cans. Pour marinade.
Advice: it is better not to add mustard so that it does not disturb the fermentation process. Other spices to taste.
Cover the jars with lids and leave for 5-6 days until the fermentation process stops.
After that, wash the cucumbers several times in clean water. We first drain the brine from the cans. Pour clean water into the jars, screw on the lids and store in the basement or in the pantry.
You can boil the brine and cook a pickle on it, use it to marinate other cucumbers - you get wonderful low-salt cucumbers, if you don't overcook them in the marinade.
Cucumbers are stored for quite a long time, several years, they are crispy and very tasty.
