The man said that for him there is no tastier soup than salt soup prepared according to his grandmother's recipe. Everyone prepares solyanka in their own way and everywhere has its own recipe, but the tastiest is solyanka in which all proportions are strictly observed according to GOST.

My grandmother often used to make this pickle, she worked in a public catering establishment and knows exactly the entire recipe, which she passed on to me, and I am very grateful to her for that.

Preparation:

To prepare brine, I take 500 g of beef on the bone, pour 2,5 liters of water into a pot and bring to a boil.

Then I take 250 g of smoked brisket, cut it into small slices and transfer it to the pot with the beef. Next, I take four large potatoes, cut them into small cubes and transfer them to the meat pot. I put one whole peeled onion and a whole carrot there. I cover with a lid and cook after boiling for about 2 hours.

When 2 hours have passed, I take the beef and brisket out of the pot and remove the carrots and onions. I add to the broth:

  • bay leaf - 2 pcs.
  • peppercorns - 5 pcs.

Then I take one large onion and finely dice it. I send the onion to fry in a pan in oil. Fry for five minutes and add 3 tablespoons of tomato paste.

Next, I take 2-3 pickled cucumbers, cut them into small cubes and transfer them to the pan. I add 200 ml of water, bring to a boil, cover with a lid and stew over low heat for 15 minutes.




Transfer the finished roast to a pot with broth and cook for another 8-10 minutes. I separate the beef from the bone and divide it into small pieces with my hands.

I cut the brisket finely and transfer it to the pan together with the beef.

Then I take 150 g of boiled and smoked ham, cut it into small pieces and send it to the pan.

Then I add:

  • lemon juice - 2 tbsp. l.
  • salt - 2 tsp.
  • black pepper - 0,5 tsp.
  • sugar - 1 tsp.

I cover the pan with a lid and cook for another five minutes. Solyanka is ready, it should be served hot and put sour cream and olives in portions in each plate, sprinkle with greens. It is very tasty, aromatic, try to cook it, you will definitely like it!
