Ingredients:
Filling:
- dried fruits - 300 g
- orange - 1 pcs.
- rum - 50 ml.
- juice of 1 orange
Sponge:
- warm milk - 200 ml.
- yeast - 25 g
- flour - 110 g
The first kneading of the dough:

- eggs - 2 pcs.

- flour - 140 g
The second kneading of the dough:
- egg yolks - 3 pcs.
- sugar - 120 g

I wash the dried fruits, pour rum and orange juice, rub the orange peel on a grater, mix. Cover with cling film and leave in the fridge overnight.
Sponge:
I pour warm milk into the yeast. I add flour, mix. Cover with cling film for 30 minutes in a warm place.
The first kneading of the dough:
Add eggs and sugar to the mixture, mix with a whisk. I add flour and mix.
Cover with cling film and put in the fridge for 12 hours. This is how it should be according to the structure.
The second kneading of the dough:
In the bowl of a mixer, mix the egg yolks and sugar until lightened. I add the first dough and flour, mix until smooth.
When the dough pulls away from the walls, it takes about 15 minutes of kneading, I add cold butter.
I check with my hands, this is how it should stretch in a thin film and not tear.
I add dried fruits and mix.
I cover the dough with a film in a bowl and leave it in a warm place for 1 hour. When the time has passed, I transfer it to a board, grease the dough and my hands with oil, and knead. I cover it again with a film and leave it to increase by 2-3 times.
I knead the dough a little again. I form into balls, hide the raisins inside, put them in the molds. I cover with a film and leave in a warm place to grow almost to the top of the form.
Glaze:
I add powder and flour to the protein, mix until smooth. Transfer to a pastry bag.
I draw a spiral over the stripes with the glaze, sprinkle with almond petals. I heat the oven to 170 degrees. I bake for about 50 minutes.
