Salad with apples, spinach and cranberries
You will need:
- 150 g of spinach;
- 1 egg;
- 1 apple;
- 100 g of feta cheese;
- 50 g of dried cranberries;
- 50 g of walnuts.
For the filling:
- 2-3 st. l. olive oil;
- half a lemon;
- 1 tsp. honey;
- 1 tsp. grainy mustard;
- salt and ground black pepper - to taste.
Preparation:
Rinse the spinach leaves under running water and dry. Tear large leaves into pieces. Cut the cheese into small cubes. Wash the apple, dry it, remove the core and cut it into slices. To prevent the apple from darkening, sprinkle it with fresh lemon juice immediately after slicing. Boil the egg and cut it into cubes. Put all the products in a deep salad bowl, add cranberries to them and mix gently.
To prepare salad dressing, combine melted honey, mustard and 1 tbsp. l. fresh lemon juice. Add salt and ground pepper. Pour olive oil and mix everything thoroughly.
Pour the prepared dressing over the products. On top, decorate the salad with pieces of walnuts fried in a pan. Serve to the table.
Cupcakes with cranberries
You will need:
- 1 cup of sugar;
- 150 ml of milk;
- 3 eggs;
- 100 g of butter;
- 1 cup of high grade flour;
- 1 tsp. baking powder;
- 100 g of cranberries.
Preparation:
Break the eggs into a deep bowl and beat them with a whisk. Then, without stopping to mix, add sugar and milk to the eggs. Pour pre-melted butter into the whipped mass and mix all the ingredients until smooth.
Combine the flour with the baking powder and, stirring constantly, add to the other products. Knead the dough until the lumps disappear. Its consistency should resemble thick sour cream.
Wash and dry the cranberries. If you use not fresh, but frozen berries, then you should not defrost them completely, otherwise the cranberries will lose their shape. Add berries to the finished mass and mix gently.
Grease muffin tins with vegetable oil and fill them 2/3 full with dough. Preheat the oven to 180°C and put the cupcakes in it for 30 minutes. Readiness can be checked with a wooden stick or a knife: pierce the cake - if the stick is dry, it is ready. Remove from the mold, cool and serve.
