Tender cupcakes with coconut flavor and cherry inside. It can be prepared quickly without the use of kitchen appliances. From available products. A delicious addition to coffee or tea.
Ingredients (yield 15-17 muffins):
- Butter (or margarine) - 150 gr
- Milk 100 gr
- Chicken eggs 2 pcs.
- Wheat flour 200 gr
- Sugar 1 cup (200 grams)
- Coconut shavings 50 gr
- Baking powder 2 tsp.
- Cherries (fresh or frozen) 15 pcs.
- Powdered sugar (for sprinkling) 1 table. l.
Preparation
We turn on the oven at 200 degrees so that it warms up well. Melt the butter on low heat.
In a large bowl, mix the dry ingredients: sifted flour with baking powder, sugar, coconut shavings.
In another bowl, mix eggs with milk.
Pour in the melted butter and mix thoroughly.
Pour the liquid mixture into a bowl with the dry mixture and mix until smooth. This is easy to do with a whisk or just a fork. The dough is not very thick.
We fill the silicone forms with the dough to 2/3 of the volume. Put a cherry in each form and lightly cover with dough. You can not cover it, because the cherry will still fall down during baking. We put it in the oven.
Bake for 20 minutes, then check. If the top has not yet browned, move the sheet with the forms to the upper position of the oven and bake for another 5-10 minutes. Orient yourself by your oven.
Let the muffins cool a little. Carefully remove from the forms. They are very gentle. Sprinkle powdered sugar on top through a fine sieve.
