I am cooking very tasty zucchini caviar. Simple products and preparation does not take much time!

Ingredients:

  • zucchini - 2 kg.
  • onion - 500 kg.
  • carrots - 500 g
  • vegetable oil - 200 ml.
  • water - 2 glass
  • tomato paste - 4 tbsp. l. (200 g)
  • salt - 1 tbsp. l.
  • sugar - 2 tbsp. l.
  • vinegar 9% - 2 tbsp. l.

Preparation:

I fry the onion in oil, cut it into pieces, add carrots, stew until ready, covering with a lid.

I cut the zucchini into pieces, pour in water, cover with a lid, put on fire and cook until the water boils. Then I boil for another 10 minutes.

I transfer zucchini to carrots and onions without liquid.

I put everything in a saucepan, stew for another 10 minutes on medium heat. I add tomato paste, salt, sugar, mix, boil for another 10 minutes.

Now I beat everything with a blender into a homogeneous mass.

I return to the fire, pour vinegar and mix. Bring to a boil, cover with a lid and cook for another 1 minute.

I spread it in sterilized jars, tightly close the lids, turn it upside down, leave it until it cools down completely. Bon appetit!
