Today you will learn how to prepare a salad of zucchini and rice for the winter. Such a winter zucchini salad is an excellent appetizer and preparation for using vegetables out of season. The recipe for such a side dish is very simple, so be sure to try it!
Ingredients:
- onion - 200 g
- oil - 120 ml
- carrots - 200 g
- tomatoes - 350 g or tomato juice
- sweet pepper - 2 pcs.
- zucchini - 1 kg
- salt - 1,5 tbsp. l.
- sugar - 2 tbsp. l.
- garlic - 1 head
- rice - 200 g
- water - 200 g (optional)
- vinegar 9% - 2 tbsp. l.
Preparation:
I fry finely chopped onions in heated oil until golden. I add grated carrots, stir, fry.
I pass the tomatoes through a meat grinder. I add to the pan
I add diced sweet pepper. Simmer for 10 minutes, stir.
I also cut zucchini into cubes and add to all the vegetables. I stew for a few minutes so that the zucchini release the juice.
I add salt, sugar, grated garlic. Boil the rice until half done.
If you see that the vegetables did not release enough juice, add water, but this should be considered according to the situation. At the end, I add vinegar, mix and boil everything together for 10 minutes.
I spread the salad in clean jars, cover with lids. I put a towel on the bottom of the pan, lay out the cans, fill them with water up to the shoulders of the cans. Sterilize for another 10 minutes from the moment the water boils.
I roll up the jars with lids, turn them upside down, leave to cool. I keep it in the pantry.
