Preparation
The first and most important stage is to properly prepare the herring. It must be carefully cleaned from the skin, remove the insides, all fins and bones. Then cut the fillet lengthwise into thin strips.
Next, prepare the egg and onion filling. To do this, hard-boil the eggs, peel them and grate them on a fine grater. Add chopped green onions and a few spoons of homemade mayonnaise to make the mass tender and a little juicy. Add salt carefully, taking into account the saltiness of the herring.
Now it's time to assemble our roll. Spread the egg-onion filling evenly on the surface of both pita sheets. Lay the herring strips across on top so that when cutting the pieces of the snack look neat and have a harmonious appearance.
