Today I want to offer you to cook a very tasty, tender shortbread with custard and cherry jelly. It is prepared very simply, quickly, from available ingredients, and the taste is simply incredible!
Ingredients:
Dough:
- 200 g flour
- 60 g of sugar
- 100 g of cold butter
- 1 cold egg
Cream:
- 250 ml of milk
- 80 g of sugar
- 1 egg
- 25 g of corn starch
- 70 g butter
Cherry jelly:
- 400 g of cherries
- 50 g of sugar (to taste, it can be more)
- 7 g of gelatin + 40 ml of water
Preparation:
Dough:
I mix flour with sugar, add cold butter and rub it into crumbs with my hands.
I add an egg and knead the dough.
Roll out to the size of a mold with a diameter of 22 cm on parchment, 3 millimeters thick, put it in the mold without parchment.
I put the parchment on top, pour the load, it's macaroni for me. I bake in an oven heated to 170 degrees for about 10 minutes. Then I take the load and bake for another 5 minutes.
Cream:
I mix the egg with sugar, starch.
I pour milk, mix well and put on a small fire, stirring constantly, until it thickens.
I immediately add oil to the hot one, stir until it dissolves. Cover with cling film and leave to cool to room temperature.
Cherry jelly:
I first pour gelatin with water and leave it until it hardens completely for 5-10 minutes. I add sugar to the cherries and mix, bring to a boil, then add gelatin and mix.
I take the dough out of the mold and spread the cream. I put it in the refrigerator for 15-20 minutes.
I put the cherries on top, put them back in the fridge for 30-40 minutes.
I cut it and enjoy it with tea or coffee!
