Have a good day everyone and have a great mood! Today I am preparing one of my favorite preparations from zucchini. I remember this snack from my childhood. We didn't eat it as much as we did - both as a snack, and spread it on bread, and after heating it, we braided it as a second dish. I will be glad if you like the recipe).
Ingredients:
- zucchini - 1,5 kg,
- a little less than 1 cup of rice - 200 ml,
- onion - 3 pc.,
- carrot - 3 pc.,
- sweet pepper - 3 pcs.
- tomatoes - 700g,
- water - 300 ml,
- oil - 150 ml,
- salt - 2 tbsp. l., sugar - 2 tbsp. l.,
- garlic - 3-4 cloves,
- vinegar 9% - 3 tbsp. l.,
- greenery
Preparation:
Wash the rice, boil it in salted water until half cooked.
Cut the onion into cubes, grate the carrot on a large grater.
Pour oil into a deep container, fry the onion until transparent, add carrots. Fry onions and carrots for 5 minutes.
Cut the pepper into strips, send it to the vegetables in a pan, fry for 3-4 minutes.
Grate the tomatoes, remove the skins.
Put the mashed tomatoes in a pot (pan), add water. Add salt and sugar, leave covered for 5 minutes.
Cut zucchini into medium-sized cubes.
Put zucchini with the rest of the vegetables, add greens and garlic passed through a press. Simmer for 10 minutes under the lid. Then add rice, mix, stew again under the lid on low heat for 2 minutes. Then add vinegar, let it boil for a few more minutes. We turn off the fire, immediately spread the salad in sterilized jars, close, wrap for several hours.
Fragrant, tasty and hearty preparation. And a salad, and an appetizer, and a full second in one jar.
