Today I'm preparing a very tasty borscht roast! With very simple and affordable ingredients, in minutes! You will be satisfied with the taste!
Ingredients:
- Onion 2 kg
- Carrot 2 kg
- Beetroot 2 kg
- Bell pepper 1 kg
- Vegetable oil 500 ml
- Tomato paste 800 g
- Water 3 l.
- Parsley and dill stalks 200 g
- Salt 4 tbsp. l.
- Sugar 8 tbsp. l.
- Vinegar 70% 1 tbsp. l.
- Ground black pepper 10 g
- Bay leaf 6 pc.
Preparation:
I cut the onion into small cubes, grate the carrots and beets. I have bell peppers frozen, but also cut into pieces.
Fry the onion in half a liter of oil until golden, about 20 minutes.
Strain onions from oil through a sieve. I will fry all the vegetables in the same oil.
I pour the same oil into the pan and fry the carrots until soft, about 20 minutes. I also filter the oil through a sieve.
In the pan againpour the same oil and fry the beets until soft, about 10 minutes. I also filter the oil through a sieve.
I send the same oil again and fry the tomato paste. When it starts to smell, I fry it for another 1 minute, stirring constantly.
I take it off the heat and pour 1 liter of water, put it on a small fire again, stirring constantly, bring it to a boil.
I pour the tomato paste into the beets.
I add all other fried vegetables and bell pepper, mix. I add stalks of dill and parsley, I have them frozen.
Pour 3 tbsp. l. salt, 6 tbsp. l. sugar and vinegar.
I pour 1 liter again. boiling water I pour in black pepper and put bay leaves. I mix everything well.
I pour it into two pans, for convenience, add half a liter of water each. I put it on a small fire, bring it to a boil and then simmer under the lid for another 30 minutes. Then I taste the salt, add as needed. Add more sugar, 1 tbsp. spoon of salt = 1 tbsp. a spoonful of sugar.
I pour it still hot immediately into sterilized jars, cover tightly with lids. Let it taste!
