Carrot cake is a simple and delicious dessert! The preparation of the dough is very simplified and basically boils down to mixing the components and combining them with flour.
We will get a beautiful, fluffy cake in the color of the sun, carrots, pumpkin or autumn leaves... And grated orange or lemon peel and chocolate glaze will add elegance to it.
Ingredients for the dough:
- 250 ml of sunflower oil
- 220 g of granulated sugar
- 4 eggs
- 3 pcs. medium-sized carrots (approximately 300-350g)
- 300 g of wheat flour
- zest of 1 orange/lemon
- 2 teaspoons of baking powder
Preparation:
All ingredients should be at room temperature.
Pour oil into the container, add sugar, eggs, sliced carrots. Grind everything in a blender until a homogeneous mass is obtained. Sift wheat flour and baking powder directly into the mixture and add zest. Mix everything with a wooden spatula to combine the components.
Line a 25 cm diameter form with baking paper and pour the dough into it. Bake at a temperature of 170 ° C for about 40 minutes. Remove from the oven, cool.
After cooling, pour thick chocolate glaze.
Chocolate glaze:
- 150 ml of milk
- 15 g butter
- 30 g of honey or sugar syrup
- 100 g of dark chocolate
Melt all the ingredients in a water bath (stirring constantly) until a homogeneous mass is formed. Remove from heat, cool and spread over prepared cake.
