Every housewife has her own secrets for cooking delicious and juicy cabbage rolls. I suggest you try this recipe, according to which it is prepared here in Transcarpathia.
Ingredients:
- Cabbage
- Rice 500 gr
- Minced meat 700-800 gr
- 4-5 onions
- 1-2 carrots
- Bulgarian pepper 1 pc
- Tomatoes 1-2 pcs
- Pork fat 2-3 tablespoons
- Sweet paprika 2-3 teaspoons
- Salt, pepper, seasoning to taste
- Dill greens (optional)
- 1-2 tablespoons of tomato paste
Preparation:
To begin with, I prepare all the ingredients for convenience.
Boil the rice until half cooked.
Finely chop the onion, grate the carrots on a large grater, cut the sweet pepper and tomatoes into pieces.
Cabbage is prepared in the usual way: boil the cob, removing the upper leaves as they soften. If the middle vein is very large and hard, cut it with a sharp knife.
Fry the onion until golden and add carrots, sweet pepper and tomatoes. A little salt and pepper to taste. Simmer for a few minutes.
Add pork fat (you can use butter if you don't have fat) and paprika, mix and simmer for 5 minutes.
We mix vegetables with minced meat and rice. Salt and pepper to taste. Add finely chopped dill (optional).
Divide each leaf of cabbage in half in the middle and form small cabbage rolls. We put it in a pan. Salt on top.
Pour tomato paste diluted with water. And from above, pour additional hot water over the cabbage rolls so that they are almost completely covered with liquid (the top row should be half covered with water).
Simmer after boiling over low heat for 20-30 minutes.
Doves turn out very tender and juicy.
