Today I'm making pies with potatoes in a pan, from yeast dough on potato broth. The dough is simple, but the pies are very fluffy with a crispy crust.
Ingredients:

- Onion - 2 pc.
- Vegetable oil - 50 ml
- Potatoes - 700 g
- Salt - 1 tsp.
Dough:
- Potato broth - 350 ml
- Sugar - 1 tbsp. l.
- Live yeast - 15 g
- Vegetable oil - 2 tbsp. l.
- Flour - 450 g
- Oil for frying - 400 ml.

Finely chop the onion and fry it until golden in oil.
I boil potatoes in salted water, turn them into puree. I add the fried onion, mix and leave to cool completely.
Dough:
I add sugar and yeast to the potato broth and mix well. I add 3 tbsp. l. flour and mix. Cover with a lid and leave in a warm place for 15 minutes.
Then I pour oil and add flour in parts, first kneading with a spoon.
Then, on a flat surface, I knead the dough in oil, put it in a bowl, cover it with a film for 40 minutes.
I divide the dough into pieces and form balls, cover with a film for 15 minutes.
One by one, I roll out the cakes from the balls, apply the filling and pinch the dough, form patties.
I fry in a sufficient amount of oil until golden on both sides.
