I prepare it both for barbecue and just for the table for guests. Everyone likes it very much and always leaves the table first. It is really very tasty, and the main thing is that you need affordable products for its preparation.
Ingredients:
For the sauce:
- yolk - 1 piece;
- mustard - 1 teaspoon;
- salt - a pinch;
- sugar-0,5 tsp;
- lemon juice - 3 teaspoons;
- oil - 180 ml.;
- pepper and favorite spices.
For the salad:
- eggplants - 3 pieces;
- eggs - 6 pieces;
- Bulgarian pepper - 1 piece;
- melted smoked cheese - 200 grams;
- cherry tomatoes - 8 pieces;
- garlic - 1 clove;
- vegetable oil for frying, spices, greens.
First, prepare the sauce
Add salt, sugar, pepper and mustard to the yolk. Add as much mustard as you like. Then add lemon juice and oil. Beat with a blender at high speed. The sauce should be thick.
We collect the salad
Cut the eggplants into cubes and fry them with a little oil and salt. It will take you 7-8 minutes.
Place fried eggplants on the bottom of a tall transparent salad bowl. Grate garlic on top.
Eggplants should be sprinkled with sauce, draw a grid.
Place cubed boiled eggs on top. Distribute around the entire perimeter of the dishes, then the sauce again.
Cut the pepper into cubes and put mayonnaise on top.
Now cut the cheese into a cube, like on a Greek salad and put it after the pepper. Make a mesh of mayonnaise and sprinkle with finely chopped greens.
Cut the tomatoes into 4 parts and decorate the salad with them.
Advice: so that the cheese is easily cut, put it in the freezer for half an hour.
Advice: if you don't want to bother with the sauce, buy mayonnaise at the store.
