Today I am preparing a delicious salad with eggplants! Why not prepare it during the eggplant season, it's quite simple, and the taste of the salad is unforgettable!
Ingredients:
- Large eggplant 1 pc.
- Pink tomatoes 2 pcs.
- Walnuts 100 g
- Parsley 1 bunch 25 g
- Mayonnaise 100 g
- 3-4 cloves of garlic
- Salt
- Black pepper
- Sunflower oil
Preparation:
I cut the eggplants into strips, pour in oil, salt and pepper, move them well with my hands.
I put it on a baking sheet lined with parchment and put it in the oven at 180 degrees until the eggplants are browned, about 15 minutes.
I dry the nuts on a dry pan and grind them in a blender.
I pour nuts into a salad bowl, cut tomatoes into squares, chop greens.
I transfer the finished eggplants, season with mayonnaise, squeeze the garlic through a press, salt and pepper, mix.
