I am preparing cheesecake on a poppy seed cake "Day and Night" - a delicate cheese mass with raisins on an aromatic poppy seed cake. Delicious, easy-to-prepare pastries.
Ingredients:
Poppy dough:
- 200 g of dry poppy seeds
- 100 g walnuts
- 4 eggs
- 100 g of sugar
- 10 g baking powder
- pinch of salt
- zest of half a lemon
- 20 g of rum (optional)
- 100 g of melted butter
- 50 g flour
Curd mass:
- 4 eggs
- 200 g of sugar
- zest of half a lemon
- 300 g sour cream 20%
- 50 g of melted butter
- 80 g of corn starch (or 80 g of vanilla pudding powder)
- 1 kg of sour milk cheese
- 100 r rods
Preparation:
Poppy dough:
I add sugar, salt, baking powder, zest, and rum, if desired, to the eggs. Beat with a mixer.
I add poppy seeds and nuts ground in a coffee grinder, melted butter and flour. Mix until smooth.
Curd mass:
Beat eggs, sugar, lemon zest, sour cream, melted but already cooled butter and starch with a mixer.
Rub the cheese through a sieve. I pour this mass into sour-milk cheese and add raisins, also mix with a mixer.
I put parchment in a 35 x 25 or 32 x 24 cm form and pour the poppy seed mass. On top of the cheese.
I bake in an oven heated to 180 degrees for about 60 minutes.
I leave the cheesecake in the form until it cools down. Then I put it in the refrigerator for 112 hours. Let it taste!
