A refrigerator is a popular summer option for first courses. It would seem that everyone knows the okroshka recipe, although the cooking methods are somewhat different. No matter how! We will surprise you with five little-known and unusual recipes for such a familiar dish.
Refrigerator with crayfish
400 grams of cucumbers;
3 boiled eggs;
150 grams of cleaned boiled crayfish fillet;
200 grams of sour cream;
1 liter of bread kvass;
100 milliliters of brine from canned cucumbers;
greenery;
1 teaspoon of horseradish;
salt and spices - to your taste.
Prepare the dish as follows:
Peel the cucumbers and cut them into cubes. Chop the crayfish meat. Add herbs and spices and mix with sour cream. Drain the brine and kvass. Cut the eggs in half and place in serving plates and cover with okroshka. Garnish the dish with parsley leaves.
Okroshka with beer
Ingredients:
1 liter of light beer;
300-350 grams of cooked sausage or ham;
2 boiled eggs;
2-3 boiled potatoes;
200 grams of fresh cucumbers;
150 grams of radish;
greenery;
mayonnaise;
salt.
Method of cooking:
Chop potatoes, sausage or ham, eggs, vegetables and greens. Salt and mix in a saucepan with mayonnaise. Pour beer and leave for an hour in the refrigerator.
Okroshka with sauerkraut
Ingredients:
150 grams of boiled veal or veal sausage;
150 grams of sauerkraut;
3 potatoes boiled in their skins;
2 eggs;
1,5 liters of whey or sour cream;
green onion;
dill;
3 tablespoons of sour cream;
1 teaspoon of mustard;
1 teaspoon of sugar;
salt.
The dish should be prepared as follows:
Wash the cabbage and cut it into small pieces. Cut potatoes, egg whites and meat (or sausage) into cubes. Add finely chopped greens.
Prepare the sauce. To do this, grind boiled egg yolks with mustard, add sour cream, salt and sugar. Add the sauce to the chopped ingredients and mix thoroughly. Pour in whey and put in the fridge for 30 minutes.
Cold soup with small shrimps
Ingredients:
200 grams of boiled shrimp meat (krill);
3 boiled potatoes;
3 cucumbers;
3 eggs;
greenery;
sour cream;
mayonnaise;
salt.
Method of cooking:
cut the eggs, cucumbers and potatoes into cubes. Chop the greens. Add krill meat, mayonnaise, sour cream, salt to your taste and mix everything well. Pour 1,5 liters of cold water.
Okroshka on kefir
You will need:
2 liters of water;
1 liter of kefir;
3 boiled potatoes;
1 large cucumber;
200 grams of radish;
300 grams of ham;
200 grams of sorrel;
green onion;
dill;
mayonnaise;
salt.
Cook like this:
Cut the sorrel into strips and boil in boiling water for five minutes (the water should be salted). After that, leave the sorrel to cool in the water.
Chop potatoes, ham, cucumber and radish, greens and dill. Put it in a saucepan, season with salt and mayonnaise. Mix everything well. Pour water with sorrel and kefir. Leave in the refrigerator for 1-2 hours.
