Today I am making delicious biscuit cookies with jam and chocolate. It reminds me of store-bought cookies "Prymkha". The recipe is very simple, it takes a few minutes to prepare. I recommend preparing two portions at once so that there is enough for everyone.


  • 2 eggs
  • 2 tablespoons of sugar
  • 2 tablespoons of flour
  • 1/4 tsp. salt
  • jam

For the chocolate glaze:

  • 120 g of chocolate
  • 30 g butter
  • 1-2 tablespoons of milk (if needed)


We take two eggs and divide them into whites and yolks.

In a bowl, you need to add two tablespoons of sugar to the yolks and beat with a mixer until the mass turns white. It takes me less than a minute.

Add 1/4 teaspoon of salt to the egg whites and beat to stiff peaks so that the protein mass becomes lush and dense.

We transfer it to the beaten egg yolks and carefully mix. All that remains is to add two tablespoons of flour, mix and the cookie dough is ready.

I put all the dough in a bag, cut off the edge of the bag and form cookies. I pre-lined the baking sheet with parchment paper. From this amount of dough, I get exactly 20 pieces.

I put it in the oven heated to 180 degrees for 8-10 minutes. Here it is important not to overdo it so that the cookies remain soft. This is how soft sponge cookies we should get.

As you can see, the ingredients are ordinary. Spread berry jam on the cookies, I usually use sour jam or blackcurrant jelly in this recipe.

To do this, take 30 g of butter and 120 g of chocolate, melt in the microwave in short pulses.
