The simplest grated cake with the usual jam

This recipe has been with me since my childhood, when such pastries were a favorite in every home. And every time I put it on the table, it is eaten faster than a cake. The famous grated cake with jam is a magical pastry for tea. The version with blackcurrant filling is the most classic and tastiest. But you can also prepare it with any jam or jam.


  • Flour - 300 gr.
  • Baking powder - 1 tsp.
  • Butter - 100 gr.
  • Eggs - 1 pcs.
  • Sugar - 70 gr.
  • Vanilla sugar - 8 gr.
  • Sour cream 15% - 2 tbsp. l.
  • Jam - 200 gr. (I have black currants)

Pour flour into a bowl and add baking powder. Stir with a spoon. I add cold butter, cut into cubes.

I rub the mixture into crumbs with my hands. It is very fast, takes literally half a minute.

In a separate bowl, mix a cold egg, sour cream, regular and vanilla sugar. I mix everything and beat very lightly with a whisk until bubbles appear.

I pour the liquid mixture into the dry mixture.

I mix it again and knead it with my hands for a short time. It is not necessary to achieve perfect homogeneity of the dough.

I divide the dough into two parts - one is slightly larger than the other. I put both parts in a bag and send it to the freezer for about 1 hour.

An hour later, I take the dough out of the freezer. I cover a baking sheet (18 by 30 cm) with baking paper and grate most of it on a coarse grater. Distribute evenly over the entire surface of the tray. Spread a layer of jam on the dough. I have black currants. But in fact, you can do anything. Currants give a very pleasant acidity and a beautiful color.

Again, I rub a smaller part of the dough on a grater and distribute it over the surface.

I put the cake in a preheated oven and bake it for 25-30 minutes at 180 degrees.

I let the cake cool down and remove it from the pan.

I sprinkle with powdered sugar and cut into pieces. It turns out such beautiful pies. Well, right from our childhood.
